Atkins Parmesan Chicken
Ingredients:
- 1/2 cup Parmesan cheese
- 1/4 cup Atkins Quick Quisine Bake Mix
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 eggs
- 1 cup Atkins Bread Crumbs
- 3 pounds chicken legs
Directions:
Preheat oven to 350 degrees. Line a baking sheet with foil and fit with a rack.
Combine half the cheese, bake mix, salt and pepper. Bread chicken with combination and eggs. Place on rack to dry for 15 minutes.
Heat 1/2’ oil in skillet. Fry chicken, skin side down first, 3 minutes per side. Drain on paper towels. Place on baking sheet with rack. Bake 30 to 35 minutes.
