Black Bean Burgers

Ingredients:

  • 1/2 medium onion, roughly chopped
  • 1 tablespoon chopped garlic
  • 2 (15-ounce) cans black beans, rinsed and drained, divided
  • 2 tablespoons freshly chopped cilantro leaves
  • 2 tablespoons freshly chopped parsley leaves
  • 1 egg
  • 1 teaspoon red pepper flakes
  • 1/2 cup bread crumbs
  • Salt and fresh ground black pepper


Directions:

1. In food processor mix onion, garlic, 3/4 of the black beans, parsley and cilantro, pulse it until everything is chopped well.

2. Add egg and red pepper flakes to food processor and pulse to mix into the rest of the mixture

3. In a large bowl mix paste from the food processor with the remaining black beans and the breadcrumbs

4. This is still going to be a bit of a wet mess so don't expect to form a patty yet. Get your pan hot, add some oil, put in a handful of the mixture and flatten out with your spatula. (I weighed it out on a scale to get proper serving sizes, but it turned out to be a small handful per burger, so no need to worry unless you are counting calories)

5. Once the now patty shaped patty is browned up, it should now hold its shape, so just flip with your spatula and cook a couple more minutes, should take about 3-4 minutes per side, depending on how browned you like them.

(Note: I made these with dried, soaked, cooked beans but I imagine they would be just as good using canned beans)
