Chicken, Baked & Stuffed With Sweet Pepper Sauce

Ingredients:

  • 1 pound chicken breast halves without skin
  • 4 ounces mozzarella cheese
  • 1 egg slightly beaten
  • 1/2 cup bread crumbs
  • 3 tablespoons olive oil
  • 3/4 cup green onions
  • 1 teaspoon garlic minced
  • 7 ounces roasted peppers finely chopped
  • 1 cup heavy cream
  • 1 teaspoon basil leaves crushed

Directions:
pound chicken until 1/4’ thick. In center of each breast, place 1 ounce cheese. Roll around cheese. Dip in egg and coat with bread crumbs. Place in oiled baking pan. Drizzle with 2 tablespoons of oil. Bake at 350 degrees for 20 minutes. Sauté onions and garlic in remaining 1 tablespoon of oil for 1 minute. Add remaining ingredients, simmer and stir for 5 minutes. Pour over cooked chicken.
