Chicken Kabobs

Makes 4 servings.
Ingredients:

  • 8 ounces pineapple chunks in juice
  • 1/3 cup corn syrup
  • 1/4 cup corn oil
  • 1/4 cup soy sauce
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 12 scallion
  • 1 clove garlic minced or pressed
  • 2 chicken breast, no skin, no bone, R-T-C cubed
  • 2 green peppers cut 1 inch thick
  • 8 water chestnuts

Directions:
drain pineapple, reserve juice. Stir together juice, corn syrup, corn oil, soy sauce and spices. Add chicken and toss to coat well. Cover and refrigerate for 4 hours or overnight. Place alternately on skewers chicken, peppers, green onions and water chestnuts. Grill 6’ from charcoal, turning and basting frequently for 8-10 minutes.
