Chicken Kabobs
Makes 4 servings.
Ingredients:
- 8 ounces pineapple chunks in juice
- 1/3 cup corn syrup
- 1/4 cup corn oil
- 1/4 cup soy sauce
- 1/2 teaspoon ground ginger
- 1/8 teaspoon pepper
- 12 scallion
- 1 clove garlic minced or pressed
- 2 chicken breast, no skin, no bone, R-T-C cubed
- 2 green peppers cut 1 inch thick
- 8 water chestnuts
Directions:
drain pineapple, reserve juice. Stir together juice, corn syrup, corn oil, soy sauce and spices. Add chicken and toss to coat well. Cover and refrigerate for 4 hours or overnight.
Place alternately on skewers chicken, peppers, green onions and water chestnuts. Grill 6’ from charcoal, turning and basting frequently for 8-10 minutes.
