Cowboy Caviar
Bean Salad
Ingredients:
- 1 can black eyed peas
- 1 can corn
- 1 can black beans
- pimentos - diced
- celery - diced
- red onion - diced
- 1/2 c apple cider vinegar
- 1 c olive oil
- 1/2 c sugar
Directions:
Combine beans and vegetables in a bowl and set aside.
Mix and bring vinegar, olive oil and sugar to a boil and pour over bean mixture and let rest over night in refrigerator
- serve with chips or over rice
