Hawaiian Flan

Ingredients:

  • 1 cup sugar
  • 1/2 cup water
  • 6 eggs
  • 1 can sweeten condensed milk
  • 1/4 cup sugar
  • 1 1/2 cups pineapple juice
  • 1/8 teaspoon salt
  • 1 small can crushed pineapple drained
  • Whipped cream topping

Directions:
Get 8’ x 8” pan ready (metal or glass). Combine 1 cup sugar and water in saucepan. Bring to boil, stirring then swishing until golden brown. Put in pan and tip to cover bottom and sides. Run water in saucepan and put in sink. Beat eggs until light yellow and thick. Add sweetened condensed milk, 1/4 cup sugar, salt and pineapple juice, beat thoroughly. Strain into baking pan. Find a larger pan that will hold 8” x 8” with at least 1 inch on each side. Place the custard pan into the larger pan. Slip into over; pour hot tap water in the larger pan to immerse the custard pan halfway up. Bake at 350 degrees for one hour or until a knife inserted in center comes out clean.
