Jelly Roll
Makes 9 servings.
Ingredients:
- 1 cup cake flour
- 5 eggs separate out yolks
- 1 teaspoon vanilla
- 1 cup sugar
Directions:
separate eggs. Beat yolks with 1/2 cup sugar and vanilla. Beat egg whites until stiff with 1/2 cup sugar. Add yolk mixture to egg whites. Fold flour into egg whites.
For jelly roll:
bake in waxed paper lined cookie sheet at 350 degrees for 15 minutes. Immediately upon removing from oven, turn
onto moistened towel. Removed waxed paper and roll into jelly roll shape. Hold for two minutes. Remove from
moistened towel. Spread with strawberry preserves and roll. Cool.
For sponge cake:
bake in waxed paper lined 9 x 13’ Pyrex dish. Immediately upon removing from oven, turn onto dry towel. Remove
waxed paper and cool.
