Lacy Chocolate Oatmeal Sandwich Cookies
Ingredients:
- 1/4 pound butter, unsalted melted
- 1 cup oatmeal finely chopped
- 1 cup sugar
- 1/2 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1 teaspoon orange juice strained
- 6 ounces semisweet chocolate melted
Directions:
Set rack in upper and lower oven. Buttered foil pans. Pour melted butter in a bowl; add remaining ingredients except chocolate one at a time. Drop by 1/2 teaspoons, 3 inches apart in all directions. Bake 8-10 minutes at 350 degrees until brown on edges, light in middle. Slide foil onto cooking racks. When completely cool, peel from foil, half bottom side up. Spread bottoms with 1/2 teaspoon melted chocolate. Top with another cookie. Store with waxed paper between layers.
