Lemon Bar Cookies
Ingredients:
- 2 cups flour not sifted
- 1/2 pound butter room temperature
- 1/2 cup sugar
- 1/8 teaspoon salt
- 1 cup lemon juice
- 2 teaspoons lemon zest
- 3 cups sugar
- 6 eggs fork beaten
- 1 cup flour
Directions:
Cream together butter and sugar. Add with flour and salt. Spread onto greased 9” x 13” cookie sheet with 1/2 edge on all sides. Chill. Bake at 350 degrees for 15-20
minutes or until golden around the edges.
Mix eggs with white sugar. Add lemon juice and zest. Add flour and mix thoroughly.
Pour on top of baked crust and bake at 350 degrees for 30-35 minutes. Remove from oven and sprinkle with additional powdered sugar. Cool thoroughly and cut into brownie size bars.
