Mini-Cheesecakes
Ingredients:
- 16 ounces cream cheese
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- Vanilla Wafer cookies
Directions:
Beat until thoroughly blended. Prepare cupcake pan with paper cups. Put vanilla wafer in cup, pour mixture on top. Bake at 350 degrees for 5 minutes. If you want fruit topping, add Comstock pie filling on top before baking.
