Pecan French Toast
Henry Sawyer Inn
Ingredients:
- 4 eggs
- 2/3 cup orange juice
- 1/3 cup milk
- 1/4 cup sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon nutmeg
- 8 slices Italian bread 112 inch thick
- 1/4 cup butter
- 1/2 cup chopped pecans
Orange Sauce:
- 1/2 cup butter
- 1/2 cup sugar
- 6 ounces orange juice, frozen concentrate
Directions:
Blend the first six ingredients together. Arrange bread in baking pan in a single layer. Pour egg mixture over top, covering entirely. Refrigerate 2 to 24 hours. Butter baking dish. Melt butter in oven and spread in baking plan. Add bread in a single layer. Sprinkle withl/2 the chopped pecans. Bake at 350 degrees for 20 minutes. Sprinkle with remaining chopped pecans and bake 10 minutes more.
Orange sauce: Mix ingredients together. Cook but do not boil. Cool for 10 minutes. Beat to thicken.
