Pineapple Upside Down Cake
Ingredients:
- 2 tablespoons margarine
- 2 tablespoons brown sugar
- 1/3 cup corn syrup, dark
- 4 pineapple rings in syrup
- 1/3 cup pineapple syrup
- water
- 1 egg
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 1 1/2 cups cake flour
Directions:
Combine first three ingredients in 8 square pan. Arrange pineapple slices on top. Add water to pineapple juice to produce 1/2 cup. Combine in 2 quart shaker - pineapple juice, egg and sugar - shake 50 times; add oil - shake 10 times; add flour - shake 30 times. Pour in pan. Bake at 375 degrees for 30 minutes. Immediately invert onto service plate. Let stand 1 minute, remove pan.
