Raspberry & Walnut Shortbread Bars

Makes 24 servings.
Ingredients:
Shortbread Base:

  • 1 1/4 cups flour
  • 1/2 cup sugar
  • 1/2 cup butter

Topping:

  • 1/3 cup raspberry jam
  • 2 eggs
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 2 tablespoons flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1 cup walnuts chopped

Directions:
prepare shortbread base by cutting butter into flour/sugar. Press onto bottom of lightly greased 9’ square pan. Bake at 350 degrees for 20 minutes. Spread raspberry jam on base. Beat eggs with brown sugar and vanilla. Add flour, salt and baking soda. Add walnuts. Spoon over jam and spread to corners. Bake at 350 degrees for 20-25 minutes. Cool in pan.
