Ricotta Cheese Cookies

Makes 80 servings.
Ingredients:

  • 4 cups flour sift before measuring
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder heaping
  • 1/2 pound butter softened
  • 2 eggs
  • 2 cups sugar
  • 1 pound ricotta cheese
  • 2 teaspoons vanilla

Directions:
mix dry ingredients together. Cream butter and sugar. Add eggs. Add vanilla and cheese. Blend well. Add dry ingredients and mix well (will be sticky). Refrigerate for 2 hours. Roll into 1” balls. Bake at 350 degrees for 10-12 minutes on greased cookie sheet until white on top and brown on bottom. Lay flat to cool completely before icing.
Icing:

  • 1/2 box confectioners sugar
  • 2 drops anise flavoring
  • milk to blend
  • sprinkles if desired

Directions:
dip top of cookie in icing. Place on cookie rack with plastic wrap underneath to catch drippings. Do not store in sealed container - cover with aluminum foil only. Do not make too far in advance of eating.
