Seafood Kabobs

Makes 4 servings.
Ingredients:

  • 16 mushrooms
  • 16 shrimp peeled and de-veined
  • 8 sea scallops
  • 1/3 cup vegetable oil
  • 1/4 cup white vinegar
  • 1/2 teaspoon tarragon
  • pinch pepper
  • 1clove garlic minced
  • 1 zucchini cut 1 inch thick
  • 8 cherry tomatoes

Directions:
place mushrooms, shrimp and scallops in shallow pan. blend oil, vinegar and spices ingredients together. pour over shrimp mixture and mix well. cover and refrigerate overnight, turning occasionally. thread alternately onto skewers mushrooms, shrimp, scallops and zucchini. grill 6’ from charcoal, turning and basting frequently with marinade for 5 minutes. add tomatoes to skewers and grill 5 minutes more.
