Starlight Cake

Ingredients:
2 cups flour 1 1/2 cups sugar 3 1/2 teaspoons baking powder 1 teaspoon salt 1/2 cup shortening 1 cup milk 1 teaspoon vanilla 3 eggs

Directions:
Beat all ingredients in large mixer bowl on low speed, scraping down constantly, for 30 seconds. Beat on high speed, scarping bowl frequently, 3 minutes. Bake 350 degrees in greased 1 3x9x2 for 40 to 45 minutes or 2 8’ round pans for 30 to 35 minutes. Frost with French silk icing.
Variations:
Eggnog - Substitute rum flavoring for vanilla. Add 1 teaspoon ground nutmeg and 1/2 teaspoon ground ginger.
Golden - Substitute 2 1/4 cups cake flour for all-purpose flour. Decrease baking power to 3 teaspoons, increase vanilla to 1 1/2 teaspoons. Decrease egg to 2.
Orange - Substitute 1 tablespoon grated orange peel for vanilla.
