Carrot Cake - Tropical
Makes 24 servings.
Ingredients:
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 112 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 2 cups carrot grated and raw
- 8 ounces crushed pineapple drained
- 1 cup walnuts chopped
- 4 eggs lightly beaten
- 2 cups sugar
- 1 1/4 cups vegetable oil
- 1/2 cup coconut flaked
Directions:
Mix dry ingredients together. Beat eggs lightly and add sugar. Add oil. Add dry ingredients. Add carrots and pineapple. Add walnuts and coconut.
Bake in lightly greased tube pan at 350 degrees for 60-65 minutes.
