Vegetarian Mushroom-Walnut Meatloaf

Ingredients:

  • 1 tablespoon olive oil
  • 12 ounces crimini mushrooms, chopped
  • 1 small red onion, finely diced
  • 1 red bell pepper, seeded and diced
  • 1 tablespoon ground sage
  • 1 1/4 cups cooked brown rice
  • 1/2 cup walnuts, finely chopped
  • 1 envelope onion soup mix
  • 1 cup oat bran
  • 1 cup wheat germ
  • 2 egg whites, lightly beaten
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons prepared mustard

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. Heat the olive oil in a large skillet over medium heat.
3. Stir in the mushrooms, onions, and bell pepper; cook until the onion is transparent, about 5 minutes.
