Zucchini Cake

Makes 20 servings.
Ingredients:

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups zucchini grated, raw, unpeeled
  • 1 112 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 3 cups flour un-sifted
  • 1 cup walnuts chopped
  • 1/2 cup raisins

Directions:
soak raisins in warm water and dry well. grate zucchini and blot with paper towels to remove excess liquid. beat eggs until foamy. gradually add oil and sugar. add zucchini, cinnamon, salt, baking soda and baking powder. add flour in small amounts, mixing well after each addition. fold in walnuts. bake in greased bundt pan at 350 degrees for one hour.
